This matcha is produced by a tea farm that has been dedicated to organic cultivation for over 50 years. By shading the tea plants from sunlight before harvest, the rich umami flavor is enhanced and concentrated. The leaves are then slowly and carefully stone-ground, resulting in a smooth, mellow matcha with minimal bitterness and astringency.
