KOTOSHINA's "Organic Matcha" is crafted with the utmost care and dedication in an organic tea garden that has preserved the tradition of tea-making for over 50 years in Uji, Kyoto.
Blessed with an ideal natural environment—including an optimal climate and rich soil—Uji is a historic region renowned for producing high-quality green tea, deeply rooted in the tea culture of Kyoto, an ancient capital with over a thousand years of history. Within this distinguished region, the tea leaves used for our collection are harvested from soil that has been meticulously managed without the use of pesticides or chemical fertilizers for at least three years.

About Matcha
KOTOSHINA’s organic matcha is made using "tencha" from the season's first harvest. Because this tencha is grown using the "Ooishita-saibai" (shaded cultivation) method—which is also used for growing Gyokuro green tea—it features a rich, concentrated umami within its mellow flavor, characterized by minimal bitterness and astringency, and a pleasant aftertaste.
Furthermore, there is immense value in matcha because it allows you to consume the entire tea leaf without wasting any part of it. When green tea is brewed normally, "tea dregs" (used tea leaves) remain, but it is precisely within these tea dregs that an abundance of rich nutrients is contained, such as catechins, vitamins, dietary fiber, and minerals.
This is KOTOSHINA's organic matcha, filled with the blessings of nature and crafted by carefully grinding these high-quality tea leaves.

How to Brew
How to Prepare Usucha (Thin Matcha)
What to Prepare:
- Matcha Tea Bowl (Chawan)
- Bamboo Whisk (Chasen)
- Bamboo Tea Scoop (Chashaku)
Preparation Steps:
- Place 2 scoops of sifted matcha (approximately 2 grams) into the tea bowl using the chashaku.
- Prepare 60 ml of hot water that has been cooled to between 70°C and 80°C (158°F–176°F).
- Whisk briskly with the chasen for about 15 seconds.
POINT:
If large bubbles form on the surface, gently pop them with the tip of the chasen to smooth the surface for a beautiful appearance. Furthermore, the finer the foam, the smoother the texture and the more delicious the matcha becomes. Please enjoy it together with delicious sweets.
